Zesty Zip for your Spring Turkey

As Spring begins to bloom, we truly want to add a bit of brightness to our dinner plate as well as the warm sun outdoors.  Heavy gravy and breading are great for filling your tummy with warmth, but this time of year I long for charcoal grills and fresh green foods to satisfy.  Here is a Lime Twist on your typical Wild Turkey dinner.  Some salsa and chips with side item of rice complete the perfect plate.  Maybe a Margarita for the fabulous finish.  Whatever twist you put on it, this is a sure fire way to brighten your Spring Turkey Dinner.

 

Yield: Approximately 1 ¼ cups
Marinate Time: 4 – 8 hours
Prep time:
 10 minutes

Ingredients:

  • ¾ cup lime juice
  • 1 teaspoon lime zest
  • ½ cup olive oil or salad oil
  • 3 tablespoons brown sugar
  • ½ teaspoon ginger
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 lime, cut into slices

Directions:

  1. Combine all ingredients and pour over turkey pieces in a baking dish or bowl.
  2. Cover dish and refrigerate a minimum of 4 hours, preferably overnight.
  3. Drain the marinated turkey prior to cooking. If you are grilling, apply more of the marinade to the turkey, using a brush.
